Coffee Donuts with Chocolate Glaze

I recently did a partnership with Boyer’s Mash-Up Coffee (one of my fav coffees these days!) and was trying to think of something I could bake with the coffee grounds to shoot with the french press coffee. In a moment of genius, I came up with donuts! I had a donut pan that had been sitting in my kitchen cabinet for a few months without being used and I decided no time like the present!

I’m so happy with how these donuts came out, they were the perfect pairing with fresh coffee and I’ll definitely be making them next time I have a brunch party. The recipe is pretty simple, let me know if you try it out for yourself! I used the Costa Rica & Honduras Mash-Up blend but you could use any of the Mash-Up blends (linked here). I love the Mash-Ups because they blend 2 or more hand-selected, single origins into one - creating a really unique flavor! Each bag also has suggested ways to brew and food pairings, which I always appreciate :)

Coffee Donuts with Chocolate Glaze

Recipe will make enough batter for about 18 donuts

Coffee Donuts


  • ¼ cup butter (room temperature)

  • ¼ cup vegetable oil

  • ½ cup granualted sugar

  • ⅓ cup brown sugar

  • 2 large eggs

  • 1 ½ teaspoons baking powder

  • ¼ teaspoon baking soda

  • ½ teaspoon nutmeg

  • 2 tablespoons coffee grounds

  • ¾ teaspoon salt

  • 1 teaspoon vanilla extract

  • 2 ⅔ cup all purpose flour

  • 1 cup milk


  • Preheat oven to 425 fahrenheit, lightly grease donut pans

  • Beat together butter, sugars & vegetable oil until smooth

  • Add eggs, continue to beat until combined

  • Stir in baking powder, baking soda, salt, nutmeg, vanilla & coffee grounds

  • Alternate adding the flour and milk into the mixture while stirring (batter will be thick)

  • Spoon batter into lightly greased donut pans

  • Bake for 10 minutes

  • Let sit for 5 minutes before turning them out of the pan

Chocolate Glaze


  • ½ cup semisweet chocolate chips

  • 2 tablespoons butter

  • 1 tablespoon plus 1 teaspoon light corn syrup

  • ¼ teaspoon vanilla extract


  • Melt ingredients together over low heat while stirring (you can also microwave in 15 second bursts, stirring in between)

  • Dip donuts in the glaze
